Rainbow Cake

After seeing various rainbow cakes on the web, I just had to try one. Marjie's birthday just after St. Patricks day seemed like the perfect time. I just used a white cake mix, divided it into six equal portions and add food coloring to get the desired color. I baked them in 9 inch round cake pans for 6 or 7 minutes each (they are so thin they cook very fast). The next day I assembled and frosted and, Voila!! Rainbow cake.

I love it! I am always mesmerized by rainbow color anything (I haven't changed much since third grade- I like rainbows and glittery things). you could also add a scoop of vanilla with caramel sauce on it, then you would have gold at the end of the rainbow.)

You could put those chocolate coins that are wrapped in gold paper in a stack by the cake. That would really be the pot of Gold at the end of the rainbow.

Yes, I put red on the top and violet on the bottom. I did, however, leave out indigo. I can just imagine some rainbow enthusiast chewing me out over that faux pas.

Claire is always asking my why I leave out indigo when I tell her rainbow order and I tell her that indigo just isn't necessary. That probably will ruffle the feathers of rainbow enthusiasts who may happen to read this.
